Bought a hotpoint G750TX hob

What size cooker hood should I buy? 60, 70 or 90cm? I'm considering something like this, but the existing piping doesn't go up and out, but to the side, so can I fit the existing flexible piping to these types?

Well you can use any extractor you like but the hob is 70cm wide so you I would advice the 70 cm hood to match size of hob or the slightly bigger 90cm

You can use the hood you picked as the connection to the ducting is on the top of the hood itself not the top of the chimney attached however if you want to connect sideways you will have to cut into the side of the chimney section,if you can not do this,if you mark were to cut and take to a local fabrication shop or sheet metal workers they will do for a small charge
 
Can you buy chimney 90 angle with cut out and end sealed? I was thinking if the chimney is rotated 90', goes all the way into the wall or cupboard and the remainder the pipe continues to the existing vent hole. Red for chinmney, green for cupboard, silver for tubing. That way it'll look very neat, rather than how it is now or with visible flexible piping. And easier to clean.
