I have jg guest 15 mm stubs and I am fitting a shower mixer bracket i want to know if the end of the guest pipe needs to be flush with the end of the chrome compression nut or can it protrude past a little bit etc...any feedback would be appreciated

It needs to be flush or a little bit recessed. The water tight seal is made at the olive so anything past the olive is not needed.
It 'could' be fine with a little protrusion but considering how easy it is to trim it back you might as well do it right.
