Almost near the end of my course with 4 exams remaining and all assessments complete apart from on site evidence which is now needed to complete the level 2 6189 course

get the local papers, do a search on the gas safe site for installers in your area,
do the same on the CIPHE website.
when you have a list of all the plumbers in your surrounding area get your phone and pen ready, start at the top of the list and work through it.
you may draw a blank or you might just get a positive reply.

Yes check the papers, call people up, check out larger firms and offer to work for free. You gotta think outside the box a little and be really positive.
