Do we "have " to use restrictor elbows on gas fires?

it is all down to looks and what finish you want, a restrictor elbow and floor flange is a good way of terminating a gas pipe where it comes through the floor as you can fix it to the floor, also using a restrictor without the floor flange is a good way of terminating the supply pipe if it is surface run, but an appliance needs an isolation valve, what you use is down to you as long as you secure the pipe properly and the 8mm chrome pipe under the fire isnt swinging about
 
no nothing at all your just providing a means of isolation as kirk said all down to looks
 
i'm sure you can find various bent 'plain' floor flanges with a female thread and then locate a valve where you think is accessible!
