My hot water gets extremely hot, I have tried turning down the therm on the copper tank, but it does not seem to have any affect, I have a gravity system, any ideas would be extremely grateful.

Has this just happened?
Is the immersion on?
What motorised valves, if any, are in the airing cupboard?
Does turning the boiler thermostat down help?
 
The immersion is off, I have the central heating pump in the cupboard, will try boiler thermostat next.

What boiler do you have installed? It's unusual to have a thermostat on the cylinder with a gravity system, by-the-way 🙂 Not impossible, just unusual 🙂

Is the thermostat attached to the copper tank securely without a gap? Can you hear the pump/boiler turning on and off when you turn the thermostat either side of the threshold point?

Sozz mate but the op mentioned gravity system! pump doesn't run on gravity! Now if their knowledge is limited then fair enough but someone along the line has told them they have an old gravity system!
 
It is very common for people with little knowledge of heating systems to
refer to pumped open vented heating/ hot water systems as gravity systems.

As previously mentioned, need to find out if 1 or more motorized valves, whether
or not 2 or 3 port.

Good thought johnnyplumb, forgot about these old things that was put on gravity systems ! cant even remember what they are call'd ! (It's an age thing) can you still get them ??
 
thats what it is, a cyltrol valve, i,ve got at least a dozen of them in my garage, all still in there boxes. had them since the early eighties. i think there still available.
