Refrigerator Waterline Connection

Purchased a new Frig at Best Buy. The installer came, and left everything b/c there wasn't a shut-off valve behind Refrigerator. There is a copper water line, which is about 9' which goes through a hole in floor, and connects to water through a small dedicated shut-off valve. He wouldn't let me shut off, as it wasn't at frig.

It was suggested I remove the copper waterline, and replace with a Stainless Steel Waterline. And connect Frig myself. I shut off the small valve, disconnected copper line at fridge, and there is a small leak even after 30 minutes, which means it's more than just the water in the line. I assume I could still replace the copper line with Stainless and connect to new Frig, however should I be concerned that when I shut off the valve, there is still a little water flow?

What would you suggested here?
