Well for me to be honest if you feel in your gut there being rough then as you said your paying so if you feel it's not quite right then get it checked out if it's grand no harm done and your plumbers need not find out
From what your saying about pulling open pipes throu rubble is not sounding tidy

The acid test will be when it is fired up - will it work ? and if it does ace ! hearing the rads
creak for their 1st time and the boiler modulate never fails to make me pleased

at the end of the day your paying for the work, your entitled to ask any questions you want. Next time you have any work done find out exactly what you are getting before hand, communication works both ways. You need to ask the right questions and a quote should give enough important details to help you understand what your paying for.
