what your describing is a bit confusing but it sounds like you need a new mid position valve you need to test the valve with a multimeter to be sure
 
its normally by the cylinder, one pipe will go from the valve to the cylinder and the other to the heating circuit
 
It does appear that the boiler is not at fault but it is with the external equipment. More than likely the diverter/mid position valve
 
The engineer changed the motor part of this but not the valve, should I suggest a valve change? I assume this is the 'honeywell' unit....

it could be any make and yes the valve body may have failed what colour is the head?
 
the engineer should easily be able to identify the problem, i cant say if the valve is the problem, but from what you describe it sounds like it needs replacing

So here is the deal... I have a 'extended warranty' with Ideal / Homeserve. Engineer booked for today, between 13:00 and 15:00, so someone has to wait in, but we need it fixed... 15:10, Ideal call to tell me they have to cancel the appointment! I now have to wait until Monday for the next appointment. Not bad for a 24 hour service, 7 days later, I am told I need to wait a further 4 days. 11 Days in and they are still dragging feet. NEVER EVER want to deal with these guys again. Obviously not a policy I will waste my money on renewing..... and I hope others read this as a lesson to avoid!
 
OK, so boiler on, water hot, when water gets to temp, boiler stops, shows a O, which I read as no demand, even though the room stat is lower than the demanded temp. Would this point to a Diverter valve issue? If i take the room stat down below demand, then take it back up a moment later, the boiler refires, but seems to turn off 5 mins later, back to 0.......

Earlier in the week someone changed the motor in the DV, could he have wired it wrong? (The cables are a bit of a rats nest, but I assume they are in these junction boxes?)
 
that's a possibility if you don't know what you are looking at they do look like a rats nest
