I need to allow 10mm for the front panel of the tray, so have to cut the ply the tray sits on at the front 10mm short and hence it wont support the tray for the front 8cm as there's a big gap behing the front. Is this okay or do I need to do something else/differently? What do you guys do?

I'm using a cast stone tray and it will sit on a bed of mortar.

That is not a problem as long as the rest of the tray is supported correctly, which it sounds like it is

once the side panel is on it will protect the bottom edges from being knocked, which is unlikely anyway
