plumber has not fitted water supply pipes level to tiles in shower, one side is approx 5-7 mm out of line, can i fit some sort of extension to resolve?

Cranked S unions for showers should sort it. They are 1/2” one end to, fit into what you have there, and 3/4” the other end - to which you can attach any bar valve.
The cranked nature allows you to level up incorrect pipe heights or spacing.
