copper water pipes

I'm not a certified plumber but many other skills within engineering.
I'm going to be renovating my bathroom in a few months time where i have some plumbing i need to do.
Overall, i hate plastic especially for water as i have no faith in plastic. i have no experience with it nor copper plumbing. I'm a dab hand with soldering wiring so not afraid of trying soldering with copper pipes.
A few people swear blind by using the plastic piping but i am still in two minds whether to use plastic or copper piping.
What is reference for you guys and has anyone ever seen plastic fittings fail?

Many normally down to fitting but I would say 70% is installing error
