I'll let the customer do the donkey-work such as labouring, hacking off old tiles, clearing up stuff, carrying stuff up and downstairs, mixing tile adhesive for me and cleaning tools but that's as far as I am prepared to go with them.

As the song says "walk away, walk away , walk away"
alarm bells should be ringing but if you need the work include everything as everyone has said

If you do end up giving him a full breakdown make sure you add the cost of the paper it's written on and the ink used.

Business to business happens on occasions as companies like to see what the costs are alythough i dont like doing it .as for joe public i have very little time for them and generally quite abrupt with them

I don't do full price breakdowns, it will take ages to do. I have only been asked once, I said I would do it but I would charge £70 as it takes my knowledge and skills to know exactly what is needed and I am essentially handing out a list for others to use. They didn't want me to do it when they found out I would charge and also got quite annoyed haha. Some people ask me to separate materials total and labour which I don't mind doing.

There is only one customer worse than this one, the type who asks for the breakdown after the job is done!

When questioned about labour charges I always answer FREE.

I enjoy the work and only charge for my knowledge, now pay up as agreed.

I would never break down a quote down into that much detail for a private customer. A gentle reminder that you are not paying for my time but my expertise, which is backed up by my reputation, (i presume they got in touch with you, possibly recommended by somebody else). All I can think of is that the custard has been stung in the past where someone has used cheap materials, so I woukld spec what your using but certainly not the price.
