I'm going to attempt to replace my sisters standard s/steel kitchen sink (inset/sits on edge of work surface hole type) for one that's as close a match as we can get. The only problem I foresee is aligning the new sinks waste trap with the existing waste pipe where it comes horizontally through the wall from behind sink cabinet.

When fitting a similar sink does the trap normally line up with the existing waste pipe where it comes through the wall? I assume I can solve any misalignment on the vertical plane with a telescopic trap, but what about horizontal misalignment - is it likely that I will need to re-drill the hole in wall for sideways alignment and fit new waste pipe through wall? Or, is there another way?

You may need to re do the waste/traps all together, you should not need to do a new hole just re do the waste pipe from the trap.
 
I would normally adjust the pipework to go to the original hole through a wall if possible if not yeah new hole and re pipe using solvent weld personally
 
Traps often are in 2 parts so they can swivel to adapt to being lined up with a waste slightly to one side. Or you could turn the trap 90 degree to the side and use a square bend on the waste pipe.
Never drill another hole through the wall if at possible. That's what 135 & 90 degree bends are for.
 
One more question; would a telescopic P trap give more chance of lining up to an existing horizontal waste pipe through wall than a bottle trap? Or is there little difference between the two?

Telescopic traps are for height adjustment, to lower trap outlet to height needed.
Ordinary P traps that are 2 part, are adjustable by swivelling the 2 parts so to line up to a pipe that's not in line with centre of sink waste.
Standard Bottle traps don't do any of above.
