Hi, can anyone tell me how I would connect a m10x1 flexible hose to a polyplumb type fitting? I haven't started yet as I want to try and get as much info before I start. The old copper tail pipe in the picture is 15mm.

Before I thought about posting this I was going to get two 15mm shut off valves, cut the existing copper tail pipe and leave 50mm or so, connect the two shut of valves, then take of the compression ring and bolt. Finally screw on the flexibility tail pipe.... Would this be right or am I giving myself too much work?

The way you suggest will work, make sure youe don't kink the flexis, also clip those pipes because you'll have some very loose plumbing under there when you replace the copper for flexis.
Or you could use copper tails instead, they're not expensive.
 
i would ptfe tape any olive fitted to a bit of copper tail, they are soft copper and prone to leaks with compression.

fit these into the top of your isolation valves from toolstation
